Easy French Onion Soup

Easy French Onion Soup is a warm, comforting dish made with deeply caramelized onions simmered in rich beef broth, then topped with homemade croutons, provolone, and parmesan cheese. Ingredients
  

  • 2 Tbsp Olive oil
  • Tbsp Unsalted butter
  • Large yellow onions, thinly sliced (approximately 4 cups)
  • ½ Tsp Kosher salt
  • ½ Tsp Black pepper
  • ½ Tsp Garlic powder
  • 32 Ounce (960g) beef broth
  • Tbsp Worcestershire sauce
  • 30-35  Homemade croutons, or store-bought, divided
  • ¼ Cup (25g) Parmesan cheese, grated, divided
  • 6  Slices provolone cheese, divided
  • Parsley, for garnish

Instructions
 

  • Put the butter and oil in a medium pot over medium heat. Once the butter has melted, add the onions and cook, stirring periodically, for 25 to 30 minutes, until the onions are extremely soft and have a brown caramel color.
  • Add the garlic powder, salt, and pepper. Mix to blend.
  • Stir in Worcestershire sauce and beef broth. Bring to a simmer. For ten minutes, cover and lower the heat to low.
  • Place the oven rack in the middle position at the top. Set a baking pan with six broiler-safe bowls and preheat the broiler.
  • Fill each of the six dishes with the soup. Place 6-7 handmade croutons, a slice of provolone cheese, and a generous teaspoon of parmesan on top of each bowl.
  • The soup bowls should be placed to the broiler for two to three minutes, or until the cheese has browned and bubbled.
  • Before serving, let it cool a little. Garnish with parsley on top.
