Whisk the milk and eggs together in a medium bowl. Put aside.
Put the cinnamon, sugar, and bread crumbs in a small basin. Fill a shallow basin with it. Put aside.
Mix the honey and cream cheese in a small bowl until smooth.
Apply half of the cream cheese mixture on two slices of bread. Place four to six strawberry slices on top of one slice of cream cheese, leaving a 1/4-inch border. Place the other slice of bread, cream cheese side down, on top. Firmly push the edges together, working your way around the entire border, until it is completely sealed.
Continue with the remaining bread, strawberries, and cream cheese mixture.
Dredge in the bread crumb mixture after completely coating in the egg mixture.
Melt the butter in a cast-iron skillet over medium-high heat. Toast should be brown after about three minutes of cooking.
Cook until golden brown and crisp after flipping. Continue with the remaining toast.
Top with a dab of whipped cream and powdered sugar. Add maple syrup on top.
