Jalapeno Popper Filling
- 1 Cup (113g) Monterey Jack cheese, shredded
- 4 Ounce Cream cheese, room temperature
- 3 Medium jalapeño peppers, seeded and finely diced (about ¾ cup)
- 6 Slices (100g) bacon, cooked and crumbled (about ¾ cup)
- 1 tsp Garlic, minced
Meatballs
- 1 Pound Ground beef
- 1 Pound Ground pork
- 1 Large egg, beaten
- ½ Cup (50g) Parmesan cheese, grated
- 2 Tbsp Parsley, chopped
- 2 Tsp Kosher salt
- ½ Tsp Black pepper
- ½ Cup (122.5g) whole milk
- ½ Cup (54g) Breadcrumbs, plain
- 1 Tsp Garlic, minced
- ¼ Cup Yellow onion, finely chopped
Jalapeño Popper Filling
Put the cream cheese, bacon, garlic, jalapeños, and Monterrey Jack cheese in a big bowl.
Put two teaspoons of the mixture on a baking sheet lined with parchment paper and roll it into a tight ball. Continue using the leftover cheese mixture.
Place the baking sheet in the freezer and leave it there for 20 to 30 minutes.
Meatballs
Set the oven's temperature to 350°F. Put parchment paper on a baking pan.
Put the meat, pork, egg, parmesan, parsley, salt, and pepper in a big bowl. Stir until just mixed.
Put the breadcrumbs, garlic, onion, and milk in a medium bowl.
Take care not to overwork the ingredients when you combine the meat combination with the milk mixture.
Place the meatballs on the lined baking sheet after forming them into golfball-sized balls (approximately 2 teaspoons each meatball).
Gently press your thumb into the center of each meatball to form a well. Shape the meat around a ball of the filling mixture that has been placed within the well. Reposition the meatball onto the baking sheet lined with parchment after rolling it into an even ball in your palms. Continue with the remaining filling and meatballs.
Put the baking sheet in the oven that has been warmed, and roast it for 25 to 28 minutes, or until the interior temperature reaches 165°F and the outsides are browned.
