Cut russet potatoes into thin, fanned-out slices. Hasselback potatoes are cooked with melted butter on top and seasoned with salt and pepper. For more oven-baked, crispy potatoes, try my garlic cajun smashed potatoes.

Hasselback potatoes are thinly sliced but not fully cut through, allowing them to crisp up beautifully while staying tender inside. Brushed with melted butter, salt, and pepper, they bake to perfection. For a quicker method, try air frying them for a crispy, golden-brown finish in less time!

Ingredients
  

  • Large russet potatoes, washed and patted dry
  • Tbsp Unsalted butter, melted, divided
  • 1 Tsp Kosher salt
  • ½ Tsp Pepper
  • Salt and pepper, to taste

Instructions
 

  • Preheat the oven to 425°F and place a rack in the center. An unlined baking sheet should be set aside.
  • Place one potato between two skewers or chopsticks.
  • Slice the potatoes into vertical slits that are ⅛ inch apart. Keep the bottom of the potato whole and cut straight down till the knife lands on the chopstick. (The positioning of the chopsticks should avoid cutting too low.) Cut the remaining potatoes in the same manner.
  • Put the potatoes on the baking dish that hasn't been lined. Apply almost half of the melted butter to the potatoes, including the insides of the slits, using a basting brush.
  • Add salt and pepper to the potatoes.
  • Bake for 30 minutes. After the potatoes have roasted for 30 minutes, use a knife to gently pry the layers apart. Add the remaining melted butter with a brush.
  • The potatoes should be soft on the inside and crispy on the outside after another 30 to 35 minutes of baking. (The size of the potatoes you use will affect how long they need to cook.)
  • Warm up and serve. Season with salt and pepper.

Hasselback potatoes

Hasselback potatoes earned their name by chopping. They are sliced nearly but not quite to the bottom, just like in my Hasselback Cheesy Bread. The potatoes’ incisions make the ideal container for absorbing and retaining the melted butter, salt, and pepper.

After that, they are cooked until the inside is soft and the outside is crispy. Consider including this side dish on your Thanksgiving or holiday dinners as an alternative to mashed potatoes.

Ingredients for Potatoes

Potatoes: For this recipe, I used russet potatoes. After baking, I enjoy the soft inside and rugged exterior. Yukon Gold potatoes are another option. If necessary, sandwich a potato between a couple of chopsticks or skewers before slicing. This prevents you from slicing through the potatoes completely.

Butter: I brushed the potatoes with melted, unsalted butter. You might want to change the amount of salt you use, but salted butter would also work.

How Hasselback Potatoes Are Made

Before preparing these potatoes, please thoroughly wash them and pat them dry. After that, make slits in each potato, being careful not to cut all the way through. Once more, to avoid chopping through the potato completely, place it between two skewers or chopsticks.

After slicing the potatoes, arrange them on a baking sheet that has not been lined. To brush the potatoes, use roughly half of the melted butter. After adding salt and pepper, bake for half an hour. Use a knife to fan out the potatoes carefully after 30 minutes.

After that, brush with the remaining butter and bake for a further 30 to 35 minutes, or until the middle is soft and the edges are crispy. Season to taste with salt and pepper and serve warm.

These would also be ideal for adding your preferred potato garnishes, such as cheese, chile, sour cream, or any other topping, thanks to the slits in the potatoes.

Is it possible to cook these potatoes in an air fryer?

Indeed! These Hasselback potatoes can be prepared in an air fryer, just like my baked potatoes. Additionally, it really takes less time to cook. Thus, in addition to saving time, utilizing an air fryer frees up the oven for other recipes, like this Spatchcock Turkey!

Follow the directions until the potatoes are ready to cook in an air fryer. Sprinkle the potatoes with salt and pepper, brush with half the butter, and cook at 360°F for 15 minutes. After that, simmer for ten more minutes, or until the potatoes’ insides are soft and their edges are crispy, brushing them with the remaining butter.

I suggest the Ninja Air Fryer. Although you can increase the size if necessary, it is better at producing reliable results and is also very user-friendly. This air fryer has delighted me!
