Ingredients
  

  • 10 Heads garlic, about 2 inches per head
  • 2 Russet potatoes, rinsed, peeled, diced into 1-inch cubes (about 3 cups)
  • ½ Yellow onion, finely diced (about ½ cup)
  • 1 Cup (238 g) Heavy cream
  • 32 Ounce (4 cups / 960 g) Chicken stock
  • ½ Cup   (50 g) Shredded parmesan cheese
  • ½ Tsp Kosher salt
  • ¼ Tsp Black pepper
  • 1 Tbsp Unsalted butter
  • Bread bowls, for serving
  • Chives, chopped for garnish
  • Croutons, for garnish

Instructions
 

  • Line a pie pan with aluminum foil and preheat the oven to 400°F.
  • Garlic heads should be peeled and their papery outer layer thrown away. Don't let the heads fall off. (Avoid separating each clove separately.) Slice off just enough of the garlic heads to reveal the tops of the cloves (approximately ½ inch). In the pan that has been prepared, place the garlic heads cut side up. Pour the oil over the cloves and allow them to absorb it. Seal the pan's edges and place another piece of aluminum foil on top.
  • The garlic cloves should be tender and deeply golden brown after 50 to 55 minutes of baking. Let it cool.
  • In the meantime, place a big pot of salted water over medium-high heat. Boil the potatoes for 8 to 10 minutes, or until they are fork-tender. Empty the water.
  • Put the onions and potatoes in the blender's bowl. All of the garlic cloves should be squeezed into the bowl and pulsed until combined. Until the mixture is well blended, add heavy cream ¼ cup at a time.
  • Return to the pot with the garlic mixture and place it over medium-low heat. (You do not want the cream to be burned.)
  • Add butter, parmesan, salt, pepper, and chicken stock and whisk to combine. Heat for 15 to 20 minutes, stirring occasionally, until everything is thoroughly heated.
  • Cut a circle in the top of the bread bowl loaf and scoop out the interior bread with your hands to serve. Fill the bread bowl with your soup. Add croutons and chives as garnish.

Garlic: I used 10 garlic heads, each about two inches across. Garlic typically has 10–12 cloves per head. The heads will be roasted in the oven.

Potatoes: Russet potatoes are excellent in soups. They absorb moisture, allowing the soup to remain thick.

Chicken Stock: The soup’s rich, complex flavor comes from the chicken stock, which you can also prepare yourself.

Bread Bowls: For this soup and other favorite soups and salads, make your own homemade bread bowls. Of course, you can still enjoy this soup in an inedible dish!

Methods for Roasting Garlic


When garlic is the main ingredient in a recipe, roasting it brings out the depths of flavor you seek. Follow these instructions to roast garlic:

  1. Preheat the oven to 400°F and first line a pie tin with aluminum foil.
  2. Next, remove each garlic head’s outer papery layers.
  3. Next, trim the tops of each garlic head by 1/4 to 1/2 inch, exposing the cloves.
  4. Put the garlic heads in the prepared pie pan and cut side up.
  5. Saturate the garlic cloves with olive oil by drizzling it over them.
  6. Seal the edges of the aluminum foil and place another layer on top.
  7. Finally, bake for fifty to fifty-five minutes.

Note: The age of the garlic will determine how long it takes to cook. When the middle clove of garlic is tender, the garlic is done cooking. Once they have cooled slightly, the cloves should be soft and easily separate from the paper.

Can I Use an Immersion Blender to Make 100 Clove Garlic Soup?

Indeed! If you don’t have a blender to pulse the ingredients together, you could use an immersion blender. An immersion blender, sometimes referred to as a stick blender, blends ingredients without moving them to a different container. Very practical!

Is One Hundred Garlic Cloves Too Much?

The soup is actually less garlicky than you might imagine. Roasting the garlic reduces its intense, assertive flavor, giving it a softer, sweeter, and less overbearing flavor. Garlic also has many health benefits, including helping you get over that annoying cold!

How to Keep Garlic Soup in a Bread Bowl?

For up to three days, keep the soup refrigerated in an airtight container. Since it contains cream, I would advise against freezing it, as it will separate and lose its creamy quality.
